Ifumbe are Rwandan cassava fritters that fry up crisp outside and soft within. The batter is made with cassava flour instead of wheat, which gives the fritters a dense, tender crumb, and it comes together in one bowl in minutes. A little sugar and optional cinnamon keep them lightly sweet, so they work as a snack or a simple dessert. Serve them warm, straight from the paper towels.

Instructions

Put the cassava flour, baking powder, salt, sugar and cinnamon, if you are using it, in a mixing bowl. Stir well so the baking powder and sugar are spread evenly through the flour.

Pour in the milk and water, then add the beaten egg. Stir until the batter is smooth and slightly thick.

Pour enough vegetable oil into a frying pan for frying and heat it over medium heat. When the oil is hot, drop in spoonfuls of batter to make small fritters.

Do not crowd the pan. Fry in batches if needed so the fritters have room and the oil stays hot.

Fry each fritter for about 2 to 3 minutes per side, until it is golden brown and crisp.

Lift the fritters out with a slotted spoon and set them on a plate lined with paper towels to drain. Serve them warm.
