Six Layer Casserole
Six layer casserole is a hands-off beef and rice dinner that you assemble raw and let the oven finish. Diced potatoes, carrots, onion and rice sit under crumbled ground beef, and a thinned tomato soup cooks them all together as it bakes. Nothing needs browning or pre-cooking, so the whole dish can be built hours ahead of time, which makes it a practical choice when friends are coming over.
Instructions
Set the oven to 350°F. In a 9x9-inch baking dish, spread the diced potatoes in an even layer, then add the carrots, the onion and finally the raw rice, so the vegetables and rice sit in that order.
Crumble the raw ground beef over the top of the rice, breaking it into small pieces so it covers the surface.
Stir the tomato soup and the water together until smooth, then pour the mixture evenly over everything in the dish.
Season the top with salt and pepper. Bake for about 1.5 to 2 hours, until the rice and vegetables are tender and the beef is cooked through.
If you want to double the recipe, use a tall 9x13-inch dish and allow a little extra baking time. Serve with a spoonful of ketchup spread over each portion if you like.
