Italian Marinated Chicken

Italian marinated chicken is a plain, light way to cook lean breast meat without any oil. The marinade is mostly chicken broth, lifted with a spoonful of diced tomato, a little Parmesan, Italian seasoning and garlic powder. Half the mixture is kept apart and brushed on during cooking, so the chicken keeps getting basted while it grills or broils. It needs only 30 minutes in the fridge, which suits a weeknight.

Instructions

Stir the chicken broth, drained tomatoes, Parmesan, crushed Italian seasoning and garlic powder together in a shallow non-metallic dish. Pour off half of this mixture into a separate container and set it aside to use later.

Put the chicken breast halves into the marinade left in the dish and turn them over so every side is coated.

Cover the dish and refrigerate it for 30 minutes.

Lift the chicken out of the dish and throw away the marinade it was sitting in, since it has had raw chicken in it.

Grill or broil the chicken for about 15 minutes. Turn it often and brush it each time with the reserved broth mixture, and take it off the heat once it is cooked through.
