Jalapeno Sausage and Bacon Appetizers (Atomic Buffalo Turds)

Atomic buffalo turds are a jalapeño popper with a sausage tucked into the filling and a wrap of bacon around the outside. The cream cheese cools the pepper's heat, while the sausage makes each bite more substantial than a standard popper. Long, slow cooking at low heat crisps the bacon without scorching the pepper. Swap in cheddar for the cream cheese, or use quartered bell peppers if you want no heat.
Instructions
Cut each jalapeño in half lengthwise and scrape out the membrane and seeds with a spoon.
Spoon cream cheese into each pepper half, then press a cocktail sausage into the cheese.
Cut the bacon slices in half. Wrap one piece around each filled pepper half, and pin it with a toothpick or cocktail stick if it will not stay put.
If you like, brush the wrapped peppers with barbecue sauce before cooking.
Cook them on a barbecue, under a grill, or in the oven. When baking or grilling indirectly, aim for about 275°F (135°C) for roughly 2 hours.
They are ready when the bacon is crisp and the jalapeño has softened but still holds its shape without collapsing.
