Kaju Barfi (Indian Cashew Milk Confection)
Kaju barfi is an Indian sweet made from ground cashews set into glossy diamonds. The method rests on sugar syrup cooked to three-thread consistency, which gives the cashew powder just enough binding to be kneaded like dough and rolled flat. There is no flour and no milk solids to manage, only ghee, saffron and nuts. The silver foil laid on top is edible, and it is the traditional finish for festive sweet boxes.
Instructions
Put the sugar and water in a saucepan and bring them to a boil.
Add saffron to the pan and keep cooking until the liquid becomes a syrup of three-thread consistency. To check, pinch a drop between two fingers and pull them apart, and it should form three connected strands.
Melt the ghee and stir it into the syrup.
Add the cashew nut powder and mix thoroughly until no dry patches remain.
Let the mixture cool slightly so it is comfortable to handle.
Knead the mixture well, then roll it out into a rectangle about 0.5 cm thick.
Lay the silver foil over the rectangle. Cut it into diamond shapes of roughly 1.5 inches in length.
