Causa rellena is a Peruvian dish of chicken salad sandwiched between two layers of cold mashed potato. The potato is the main event here, so choose a yellow, new or red variety that mashes smooth and holds a shape. Mashing with butter and garlic gives it body, and the neat layers come from a plastic-lined dish or a ring mold. Serve it slightly chilled, which makes it a good dish for a crowd.

Instructions

Cook the potatoes, peel them, and let them cool completely. Mash them until smooth. The source lists butter and garlic, so work them into the mash as you season it.

In a bowl, mix the shredded chicken with the mayonnaise, salt and pepper. The original method also mentions onion in this step, though it does not appear in the ingredient list, so add it only if you want it.

Line a deep dish with plastic wrap, or set a molding cylinder on a serving plate. Press in a layer of mashed potato about 1 cm thick across the bottom.

Spread the chicken mixture evenly over the potato in a layer about 1 cm thick. Cover it with a final layer of potato so the chicken sits between two layers.

Lift the dish out of its mold, or slide off the cylinder, so the layered potato stands on its own. Garnish with lettuce and a little mayonnaise.

Cut the hard boiled eggs into discs and lay them over the top, then add black olives if you like. Serve slightly cold.
