Kal Kals (Sweet Curled Fritters)

Kal kals are small curled fritters made at Christmas by Christian communities in India, and they are easy to like at first sight. The dough is a simple mix of flour, egg and vanilla, shaped by rolling each piece down the back of a fork into a ridged shell. The ridges hold the powdered sugar you toss them in while they are still hot.

Instructions

Mix the flour, egg, baking powder, powdered sugar and vanilla extract together until you have a dough that is moist but does not stick to your fingers.

Pinch off pieces of dough about the size of a teaspoon and roll them into small balls.

Press each ball flat against the back of a fork, preferably one with rounded tines, then roll it off the fork so it curls into a small snail-shell shape with ridges on one side.

Heat the oil to about 350°F (180°C). Fry the curls in small batches of six so the oil stays hot, turning them until they are golden brown.

Lift the fritters out and, while they are still hot, roll them in more powdered sugar until they are coated all over.
