Khichdi (South Asian Rice and Lentils)
Khichdi is a one-pot dish of rice and split lentils, cooked together until soft and yellow with turmeric. It is a regular family dinner in Gujarat, and versions of it turn up all over India. The recipe needs only four ingredients and a pressure cooker. You can use moong, arhar or masoor dal, alone or mixed, so it adapts to whatever is in the pantry. A spoonful of ghee or a glass of buttermilk finishes it.
Instructions
Wash the rice and the dal together until the water runs mostly clear. Cover them with water and leave to soak for 10 to 15 minutes.
Add the salt and the turmeric powder to the soaked rice and dal. Put everything into a pressure cooker with 3 to 4 cups of water.
Cook under pressure until the cooker gives its first whistle. Then turn the heat down and cook for another 4 to 5 minutes.
Let the khichdi cool a little before you open the cooker. Serve it with ghee or buttermilk.
