Kids' Vegetable Puree
This is a one-pot chicken and vegetable puree made for babies, toddlers and anyone who cannot chew well. The chicken cooks alongside the carrots and tomato, so the whole meal comes together in a single pot and one blending step. Cucumber goes in later so it stays soft without turning to mush, and olive oil adds richness. Baby milk can loosen the texture for fussier eaters.
Instructions
Peel and dice the carrots. Peel, seed and dice the tomato, and cut the chicken breast into pieces. Put all three in a pot and add water until it comes level with the ingredients.
Cover the pot and cook over medium heat until the chicken is cooked through and the carrots are soft.
Peel, seed and dice the cucumber, then add it to the pot with the olive oil and salt. If most of the water has cooked away, top it up again to the level of the ingredients.
Cover and boil until the cucumber is soft. Turn off the heat and let the pot cool down completely.
Blend everything in a kitchen blender until smooth. Do not add more water. If your baby prefers a thinner texture, stir in a little baby milk as needed.
