Kuwese U Logo (Nigerian Fried Cassava)

Kuwese U Logo is fried cassava from the Tiv people of Nigeria, and it needs only four ingredients. The pieces are tossed in blended pepper before they go into the pan, so the heat seasons the outside as it fries. Groundnut oil adds a roasted, nutty note that suits the starchy root. Cut the cassava to any size you like, and serve it hot with a pinch of salt.
Instructions
Cut the cassava into pieces of whatever size and shape you like, then rinse them under water. Dry the pieces well so they do not spit when they hit the oil.
Blend the pepper until smooth and pour it over the cassava. Toss the pieces until each one is evenly coated.
Pour the groundnut oil into a deep frying pan and heat it until it is hot.
Lower the cassava into the oil and deep-fry it until the pieces are tender all the way through.
Lift the cassava out of the oil and serve it hot, sprinkled with salt to taste.
