Lamington
A lamington is a square of sponge cake dipped in chocolate icing and covered in coconut, and it is one of Australia's best-known sweets. The cake is traditionally butter cake, though plain sponge works too. The key step is speed: the coconut must go on while the icing is still wet, or it will not stick. Cut the cake into cubes of 5 to 7 cm for a neat, even result.
Instructions
Cut the sponge cake into cubes or squares. Pieces of about 5 to 7 cm are the usual size.
Spread an even layer of desiccated coconut over a flat tray so it is ready for rolling.
Dip each piece of cake into the chocolate icing until it is coated on all sides.
While the icing is still wet, roll the coated cake in the coconut, or sprinkle the coconut over the top instead.
Set the pieces aside until the icing has dried and firmed up.
