Latino Scramble

Latino Scramble is a Colombian-style breakfast of eggs cooked with browned onion, ham, sweet corn and tomato. The vegetables and ham go into the pan first, so the eggs pick up their flavor as they set. A spoonful of ketchup beaten into the eggs adds a mild sweetness, and melted mozzarella holds everything together. Serve it with cheese-topped corn arepas, strong coffee and orange juice.
Instructions
Melt the butter in a medium frying pan over medium heat.
Add the chopped onion and fry it until it starts to brown.
Stir in the chopped ham and the sweet corn, and fry for 5 minutes.
Add the diced tomato, then season with salt and pepper. If you like some heat, add one drop of Tabasco for each egg, though this is not traditional.
Beat the eggs with the ketchup and pour them into the pan. Scatter the grated mozzarella over the top straight away.
Cook, stirring as you like, until the eggs reach the texture you want, whether soft and creamy or firmly set.
