Maffé (West African Peanut Stew)
Maffé is a peanut-based stew from West Africa, cooked in countries such as Senegal, Mali and the Gambia. The sauce starts by melting smooth peanut butter into softened onion and garlic, which gives it a thick, creamy body without any flour or cream. Cumin, paprika and chile keep the richness in check, while okra and potatoes make it filling. Spoon it over steamed rice or couscous, and use either beef or chicken.
Instructions
Heat the oil in a large pot or Dutch oven over medium-high heat. Add the cubed meat and cook until browned on all sides, then lift it out onto a plate and set it aside.
In the same pot, cook the chopped onion and garlic until the onion turns translucent and the garlic smells fragrant.
Turn the heat down to low and add the peanut butter. Stir constantly until it melts and blends with the onion and garlic.
Stir in the cumin, paprika, chile powder, salt and pepper until the spices are evenly mixed into the peanut base. Add the diced tomatoes with their juices and stir everything together.
Pour in the broth a little at a time, stirring all the while so the sauce stays smooth. Return the browned meat to the pot and turn it in the sauce to coat.
Cover the pot and simmer on low heat for about 30 minutes, until the meat is tender and the flavors have come together.
Add the carrots, potatoes, bell pepper, okra and greens. Stir so every piece sits under the sauce.
Cover again and simmer for another 15 to 20 minutes, until the vegetables are as tender as you like them.
Take the pot off the heat and let it rest for a few minutes so the stew thickens slightly. Serve hot, topped with chopped cilantro or parsley.
