Maitorieska (Finnish Barley Flatbread)

Maitorieska is a barley flatbread from the Ylivieska area of Finland, made from just three ingredients and ready in about ten minutes. The dough is mixed with cold milk rather than water, which gives a tender, lightly sweet crumb. There is no yeast and no long rise. The oven needs to be as hot as it will go, so the surface spots and the inside stays soft.

Instructions

Heat the oven to 300°C (570°F), or as hot as it will go.

Stir the salt into the cold milk, then add the barley flour. Mix well until you have a dough. Start with the smaller amount of flour and add more as needed.

Shape the dough by hand into a flat, round loaf about 0.5 cm (¼ inch) thick.

Bake the loaf on an oven tray for about 10 minutes, until the surface shows some darker spots. You can also cook it in a pan on the stove or over an open fire.

Serve it fresh, with butter and a glass of cold milk.
