Marshmallow Rice Squares II
This is a small-batch version of the classic crispy cereal bar, made with only four ingredients and a microwave. The milk and powdered sugar stirred into the melted marshmallow give a softer, creamier bite than the usual butter-based method. You can also pick the marshmallow flavour: plain white, cream soda or bubblegum, which turns a familiar treat into something a little more playful and suits a quick batch for kids.
Instructions
Put the marshmallows in a microwave-safe bowl and heat them in 30 second bursts, stirring between each, until they melt into a smooth, creamy mass.
Take the bowl out of the microwave and pour in the milk. Stir for about 1½ minutes until the mixture is evenly blended.
Add the powdered sugar and keep stirring for 2 more minutes, until no dry sugar is visible.
Fold in the puffed cereal and stir for 1 more minute, so every piece is coated in the marshmallow mixture.
Return the bowl to the microwave and heat for 13 seconds, just enough to loosen the mixture again.
Give it one last stir, then press it firmly into a greased dish or pan. Leave it to set, then cut it into pieces.
