Salted fish fried rice is a fast, savory way to turn leftover jasmine rice into a full meal in about 15 minutes. The salted fish does most of the seasoning work, giving each grain a deep, briny flavor, while shredded chicken adds body and bean sprouts keep a little crunch. Garlic, red chilli and spring onion go in first, so the whole pan smells good before the rice arrives.

Instructions

Heat the oil in a non-stick pan. Add the garlic, chilli and spring onion, and stir-fry for 1 minute, until the smell turns fragrant.

Add the salted fish and shredded chicken to the pan. Keep stirring until both have changed color.

Tip in the cooked jasmine rice and the bean sprouts. Season with the salt, pepper and fish sauce, and stir everything together until the seasoning is evenly mixed through the rice.
