Mazurek Cake
Mazurek is a flat, bar-style cake with a crisp shortcrust base and a thin layer of chocolate on top. The base is pricked with a fork so it bakes level, which gives you an even surface for the topping. The real fun is the decoration: almonds, roasted seeds and sliced dates go on while the chocolate is warm and set in place as it cools. Walnuts also work very well here.
Instructions
Heat the oven to 200°C (390°F). Stir the flour and sugar together in a large bowl, then rub or cut in the butter or margarine until the mixture looks like coarse crumbs.
Add the milk or cream and the beaten egg or yolk, and knead until the dough is smooth. Cover it and chill in the fridge for 30 minutes.
Roll the chilled dough out to about ¼ inch thick. Press it evenly into a greased baking dish or rectangular forms.
Prick the dough all over with a fork so it does not puff up. Bake it in the heated oven until the base is cooked through, then let it cool a little.
Melt the chocolate in a bowl set over a pan of simmering water. Stir in the butter and the warmed cream until the mixture is smooth and glossy.
Pour the chocolate over the baked base and spread it to the edges with a spatula or knife. While the topping is still warm, scatter on the almonds, roasted seeds, sliced dates or any other toppings you like, so they stick as it sets.
