Crispy Chicken Burgers are fried ground chicken patties on a bun, with a crust that shatters. The trick is the coating: each patty takes a dip in fresh lemon juice before the flour, which gives the crust a light tang and helps it cling. A short rest before frying keeps it in place. Drain the patties on a wire rack, then pile on bacon, lettuce, tomato or Sriracha.

Instructions

Divide the ground chicken into 4 equal portions and shape each into a patty about ½ inch thick. Season both sides generously with poultry shake and set the patties aside.

Pour lemon juice into a pie plate and spread flour in a second one. Dip each patty in the lemon juice, then press it into the flour to coat.

Shake off the extra flour and let the coated patties rest for 2 to 3 minutes so the coating sets.

While they rest, heat the oil in a deep fryer or a cast-iron pot to 350°F. Lower the patties into the oil and fry until deep golden brown and the center reads 165°F on a thermometer.

Lift the patties out and drain them on a wire rack so the crust stays crisp. Serve on the buns with whatever toppings you like.
