Meatless Sloppy Joes is a quick vegetarian take on the classic messy sandwich, ready in about 30 minutes. Brown rice and chili beans stand in for the ground beef, giving the filling body and a savory, slightly spicy base. The beans are added with their canning liquid, which helps the mixture turn thick and saucy, and hickory-smoked barbecue sauce supplies the tang. Instructions
Heat the olive oil in a pan over medium-high heat.
Add the chopped onion, green bell pepper and shredded carrot. Cook for 3 to 4 minutes, until the vegetables begin to soften.
Stir in the cooked brown rice, the chili beans with their liquid, and the barbecue sauce. Cook for about 10 to 15 minutes, stirring often, until the mixture is heated through and thick.
Taste and add more barbecue sauce if you want a stronger smoky flavor. Spoon the mixture onto hamburger buns and serve.
