Microwave Chocolate Chip Cookie
This single-serving cookie goes from bare counter to finished dessert in about seven minutes, with only two minutes in the microwave. Softened butter beaten with light brown sugar gives a soft, chewy crumb, and dark chocolate chips keep it from turning too sweet. Saving some chips to press on top means the cookie comes out with melted pools on the surface. It is a handy fix for a late craving.
Instructions
Line a large microwave-safe plate with a sheet of parchment paper.
Put the softened butter and the brown sugar in a small bowl and beat them together until the mixture looks pale and fluffy.
Beat in the egg and the vanilla extract until fully combined.
Sift the flour and salt over the bowl, then fold them in gently. Fold in most of the chocolate chips, keeping a small handful back.
Scoop the dough onto the center of the plate and scatter the reserved chocolate chips over the top.
Microwave the cookie for 1.5 to 2 minutes, using the shorter time for a stronger microwave. It is ready when the dough looks set and no longer wet.
Leave the cookie on the plate to cool before eating, as it firms up as it sits.
