Turkey Biscuit
Turkey Biscuit is a baked casserole of chopped turkey under a cheese-covered layer of biscuits, made for the day after a holiday feast. The sauce is a simple mix of cream of chicken soup, milk and a little ranch dressing, which keeps lean leftover meat moist through two rounds in the oven. Cheddar melts between the filling and the biscuits, and the dough bakes up golden on top. It uses four cups of turkey in one dish.
Instructions
Cook the chopped onion in a pan until it is tender and soft.
In a bowl, combine the cooked onion with the turkey, cream of chicken soup, ranch dressing and milk. Leave out the cheese and the biscuits for now.
Stir the mixture well, then spoon it into a baking dish. Bake it at 350°F for 15 minutes, until it is quite warm all the way through.
Take the dish out of the oven and sprinkle the shredded cheddar evenly over the top.
Arrange a layer of frozen biscuit dough on top of the cheese. Return the dish to the oven and bake for about 20 to 30 minutes longer, until the biscuits are cooked through.
Serve the turkey and biscuit topping together while hot.
