Microwave Quesadilla
A microwave quesadilla gives you a melted, cheesy tortilla sandwich in about a minute, with no pan and no oil. Monterey Jack is the usual cheese because it melts smoothly, and a layer on both sides of the filling glues the tortillas together. Use fillings that are already cooked or need very little heat, such as beans, spinach, salsa or leftover meat, and finish with sour cream or guacamole.
Instructions
Set one tortilla flat on a microwave-safe plate.
Scatter half of the cheese over the tortilla, then add whichever fillings you have chosen.
Cover the fillings with the rest of the cheese and lay the second tortilla on top. The cheese on both sides helps hold the two tortillas together.
Microwave on high power for 30 to 60 seconds. It is ready when the cheese has melted and the fillings are warm all the way through.
Add your chosen toppings and eat it while it is hot.
You can use fillings and toppings beyond those listed, but make sure they will cook or warm through in the short time it takes the cheese to melt.
