Mini Herb Baguettes
Mini Herb Baguettes are a small-batch bread that makes six little loaves from under 300 grams of flour. High protein flour gives the crumb a chewy, springy structure, and the dried oregano, rosemary and thyme are mixed straight into the dough, so every bite carries herb flavor and not just the crust. Each loaf starts as a 100 gram piece, which keeps the shaping simple and the baking time short.
Instructions
Stir the flour, yeast, salt, oregano powder, rosemary powder and thyme together in a large bowl so the herbs and yeast are spread evenly through the flour.
Pour in the water a little at a time, mixing as you go, then knead the dough until it turns smooth and elastic. Cover it and leave it to stand for 30 minutes.
Weigh out a 100 gram piece of dough and let it rest for 10 minutes. Shape it into a long, narrow loaf, then repeat with the rest of the dough so every baguette is the same size.
Set the loaves on a baking sheet dusted with flour. Cut a few slashes across the top of each with a sharp knife or blade, then leave them to rise for 50 minutes, until they look puffy and light.
Spray the loaves with water and bake them in a 200°C oven for 25 minutes, until they are cooked through.
