Mpoto Mpoto (Yam Pottage)
Mpoto mpoto is a Ghanaian yam pottage cooked with fish, tomatoes and fresh pepper. The vegetables simmer right alongside the yam, then get ground into a paste and stirred back in, so the sauce is built from the same pot rather than made separately. Palm oil goes in at the end for its color and savor, and dried herring adds a deep, salty fish note. It is a one-pot meal that feeds three.
Instructions
Peel and wash the cocoyam or yam, then cut it into small chunks so it cooks evenly.
Put the yam in a pot with the onion, tomatoes and fresh pepper. Pour in enough water to cover and boil for 25 to 35 minutes.
Add the dried herring, if using, and the fish to the pot. Keep cooking until the fish and yam are both tender.
Lift out the cooked tomatoes, pepper and onion and grind them to a smooth paste.
Stir the paste back into the pot and cook for a few minutes so it blends into the yam.
Add palm oil and salt to taste. Turn the heat down and cook a little longer, stirring now and then so nothing sticks.
