Ndizi na Nyama (Tanzanian Green Bananas with Beef)

Ndizi na nyama is a Tanzanian stew of beef and unripe cooking bananas, finished in coconut milk. The green bananas behave like potatoes, turning soft and starchy while soaking up the tomato and onion base, so the pot needs no separate side. The beef simmers gently until very tender, and the coconut milk added near the end makes a mild, creamy sauce. It is a popular dish across East Africa.

Instructions

Bring a saucepan of water to a boil. Add the beef, ginger, salt and garlic, cover, and cook over medium-low heat for 15 minutes.

When the meat is almost done, stir in the oil, tomato paste, sliced onion and chopped tomatoes. Cook for 5 minutes.

Add the quartered bananas, cover the pan, and cook for 10 to 12 minutes, until the bananas have softened slightly.

Pour in the coconut milk and turn the heat down to low. Cook for 15 minutes more, until a fork slides easily into the banana and the meat is very tender.

Taste, add more salt if it needs it, and serve hot.
