Nigerian Boiled Fish

Nigerian boiled fish is a plain, quick preparation that works as the base for many of the country's soups. Cooking the fish in lightly salted water keeps its flavor clean and its flesh tender, so it can go into a pot of soup or sit beside a plate of jollof rice, fried rice, or rice and beans. Instructions

Cut the fresh fish into pieces of a convenient size for your pot. Rinse them well under running water.

Clean out the insides of each piece and discard anything unwanted, such as blood, gut remnants or loose scales.

Place the fish in a pot and pour in enough water to cover it. Add a pinch of salt.

Bring the pot to a boil and cook for a few minutes. The fish is ready when it is cooked through but still tender, before it begins to fall apart.
