Nigerian Bread Rolls
Nigerian bread rolls are soft, golden buns enriched with milk, egg and butter. The enrichment gives a tender, slightly rich crumb that stays soft well after baking. Because the rolls are baked packed together in one pan, they rise into each other and pull apart in neat pieces. The dough uses only seven ingredients, so it suits anyone learning yeast baking and wanting a dependable first loaf of rolls.
Instructions
Stir the flour, sugar and salt together in a large bowl until evenly mixed.
Add the egg and butter and work them into the flour until they are spread evenly through the mixture.
Stir the yeast into the milk and leave it until the surface turns foamy. Pour this into the flour mixture and mix until a thick dough comes together.
Knead the dough for about 8 minutes. Put it back in the bowl, cover it loosely with thin plastic wrap, and leave it in a warm spot for about 1 hour, until it has doubled in size.
Divide the dough and shape it into small balls, rolling each one until the surface is as smooth as you can get it.
Set the rolls side by side in a baking pan so they touch. Brush the tops with beaten egg.
Bake at 350°F for about 30 minutes, until the rolls are golden brown and cooked through.
Let the rolls cool in the pan for a while, then lift them out and serve.
Make it personal.
