Nigerian Cheesy Sausage Masa

Cheesy sausage masa takes the Nigerian rice cake and packs it with savory fillings. Masa is a fermented rice batter cooked in a divoted pan, and here it carries small pieces of sausage and cheese that brown and soften as the cakes cook. The method is simple, and you can use the oven or the stovetop. The contributor suggests serving them hot with fruit juice.
Instructions
Cut the sausage into small pieces of even size, and cut the cheese the same way. Stir both into the masa batter until they are spread evenly through it.
You will need a masa pan, a special pan with round divots, and you can cook the masa either in the oven or on the stovetop. For the oven, grease the pan and fill each divot to the brim with batter.
Bake in a preheated oven until the masa is puffed, golden and cooked through, then serve hot.
For the stovetop, heat the masa pan and add a little oil to each divot. Wait until the oil is hot before adding anything.
Fill each divot to the brim with batter and cook until the underside is golden brown. Flip each masa over and cook the other side until it is golden brown and cooked through. Serve hot.
