Nigerian Egg Fried Rice

Nigerian egg fried rice turns leftover boiled rice into a full meal in one pan. The egg is seasoned with a crumbled stock cube before it goes in, so every grain picks up savory flavor as it cooks. Thyme and onion soften in groundnut oil first, giving the rice a fragrant base. It is quick, needs few ingredients, and works well as a main or alongside other dishes.
Instructions
Crack the egg into a bowl and beat it until the yolk and white are fully combined. Crumble in the stock cube and mix it through.
In a separate bowl, combine the thyme, chopped onion, pepper and salt.
Heat a thin layer of groundnut oil in a pan. Add the onion mixture and cook until the onion is slightly softened.
Add the boiled rice and stir until it is warmed through and mixed with the onion and herbs.
Pour in the beaten egg and keep stirring until it coats the rice and is cooked through, with no wet egg left in the pan.
Serve hot.
