Nigerian Fish Cake (Flour-Based)

This Nigerian fish cake is a yeasted flour batter studded with flaked cod, fried in small spoonfuls until browned. The fish is fried first with salt, which firms the flesh so it stays in distinct flakes through the batter. Blended onion and fresh bell pepper flavor the dough, and a short rest lets the yeast and baking powder work before frying. Serve it with pap, custard or bread.

Instructions

Wash the cod and season it with salt. Fry it in hot oil until it is cooked through, then lift it out and let it cool.

Pull the bones from the fish and flake the flesh into small pieces. Set it aside.

In a bowl, combine the sugar, salt, black pepper, flour, baking powder and yeast.

Blend the onion and fresh pepper to a purée and stir it into the dry mixture.

Mix in warm water a little at a time until the dough becomes a thick batter. Cover the bowl and leave it for 15 to 20 minutes.

Stir the flaked fish into the rested batter.

Heat oil in a pan. Spoon in small portions of batter and fry them until browned on both sides, then remove them and drain off the excess oil.

Serve the fish cakes with pap, custard or bread.
