Nigerian Fried Cheese Curds (Wara)
Wara is a fresh Nigerian cheese made from cow milk, and this version is fried until the outside turns golden. The curds are set with lime juice instead of rennet, so the whole thing needs only three ingredients and one pot. Because the curds are drained and cut by hand, you decide the size of each piece. It is a street snack that travelers rely on.
Instructions
Pour the milk through a strainer into a large pot.
Set the pot over medium heat and bring the milk to a boil, stirring often so it does not catch on the bottom.
Turn the heat down and add the lime juice. Leave the pot alone without stirring, and watch for the curds to separate from the thin whey.
Spoon the curds into a colander and let the extra liquid drain away until they hold together as a mass.
Cut the curds into whatever shapes you like. Deep fry the pieces in hot oil until they are cooked through and lightly browned, then lift them out to drain.
