Nigerian Fried Yam

Nigerian fried yam is a plain, three-ingredient side that shows off the starchy, slightly sweet character of the root itself. Salted sticks of yam are fried in batches until golden outside and tender within. Cooking in small amounts keeps the oil from cooling and the pieces from steaming. It is traditionally served with a pepper sauce, whose heat suits the mild, dense yam.
Instructions
Rinse the yam sticks under water and put them in a bowl. Sprinkle with salt and toss so the pieces are evenly seasoned.
Heat the oil in a pan or pot. Add the yam a little at a time so the pieces sit in a single loose layer and the pan does not become crowded.
Stir the yam as it cooks, then turn the pieces so each side colors. Keep going until all sides are golden.
Lift the fried yam out of the oil and let any excess oil drain away before serving.
