Nigerian minced meat semolina pancakes are savory pancakes made with semovita and a spiced meat filling stirred straight into the batter. The meat is fried first with onion, garlic, ginger, stock cube and suya spice, so every bite carries the smoky heat of the street-food blend. A pinch of cinnamon and a little sugar in the batter add a quiet sweetness against the peppers and meat.

Instructions

Stir the semovita, baking powder and cinnamon together in a bowl and set it aside.

In a second bowl, beat the egg with the melted butter, then mix in the milk and sugar. Pour the dry mixture into the wet one and stir until the batter is smooth.

Heat a thin layer of vegetable oil in a pan and fry the chopped onion for about a minute. Add the stock cube, garlic, suya spice and ginger, and fry for another minute or two.

Add the minced meat and cook, stirring, until no pink remains. Cover the pan and cook on low heat for about 5 minutes.

Stir in the grated red and green peppers and cook for 1 minute. Take the pan off the heat and let the meat mixture cool.

Fold the cooled meat into the semovita batter until evenly mixed.

Heat a thin layer of oil in a clean pan and drop in spoonfuls of batter. Cook each pancake until the underside is browned, then flip it and brown the other side.
