Nigerian Oatcakes
Nigerian oatcakes are small savory pancakes with vegetables, sausage and banana folded into a thin oat batter. The oats are ground to a fine powder and mixed with plain flour, which gives the cakes a soft, even crumb rather than a chewy one. Sweet banana sits alongside salty sausage, grated carrot and peas, so each bite changes slightly. They cook in a thin layer of oil and are best eaten hot.
Instructions
Grind the rolled oats until they form a fine powder, similar in texture to flour.
In a large bowl, mix the ground oats with the plain flour and a pinch of salt.
In a separate bowl, whisk together the egg, milk and water. Stir this into the dry mixture until you have a thin, pourable batter.
Gently fold the grated carrots, peas, sausage pieces and banana pieces into the batter so they are spread evenly through it.
Heat a thin layer of vegetable oil in a pan. Spoon in the batter to form small pancakes.
Cook each pancake on both sides, then take it out of the pan. Serve hot.
