Nigerian Oatmeal
Nigerian oatmeal is a filling breakfast built on oats that spend the night soaking in the fridge. Soaking in milk or water softens the grains before they reach the pot, so the cooking is short and the texture turns out creamy. A pinch of salt and a pinch of sugar season the pot, and sliced banana adds natural sweetness on top. It suits a cold morning or the day after a hard workout.
Instructions
Put the oats in a bowl or jar and pour over enough milk or water to cover them. Cover and leave in the fridge overnight so the oats swell and soften.
The next day, bring a pot of water to a boil and add a pinch of salt. Stir in the soaked oats along with a pinch of sugar.
Keep stirring as the oats cook. They are ready when they have absorbed the liquid and are soft all the way through.
Take the pot off the heat. Spoon the oatmeal into bowls while it is still warm and top with sliced banana, milk, yogurt, or any combination of the three.
