Nigerian Pineapple Rice
Nigerian pineapple rice is a one-pot rice dish that pairs sweet pineapple with salty diced ham and a quick soy, sesame and ginger seasoning. The fruit sits against vegetables like carrot, corn and peas, so each forkful swings between sweet and savory. It uses cooked brown rice, which makes it a sensible way to turn leftover rice into a full meal in minutes, with only a short stint on the stove.
Instructions
Stir the soy sauce, sesame oil, ground white pepper and minced ginger together in a small bowl. Set this seasoning mixture aside.
Heat a little olive oil in a pot. Add the garlic and onion and cook until the onion has changed color.
Add the carrots, corn and peas. Cook for a few minutes, stirring all the time, so the vegetables heat through evenly.
Add the cooked brown rice, pineapple, ham, green onions and the soy sauce mixture. Cook for 2 minutes, stirring constantly, until everything is hot and coated in the seasoning.
Serve straight from the pot.
