Spicy Chickpeas

Spicy chickpeas are a quick skillet dish built from a can of chickpeas and a jar of Dijon mustard. Drying the beans before they hit the hot oil is the key step, since it lets them blister and brown rather than turn soft. The mustard goes in at the end, so its sharp heat stays bright. It is cheap, takes about ten minutes, and suits a bare pantry.
Instructions
Drain the chickpeas well, then pat them dry with a clean towel so they brown instead of steaming.
Heat the oil in a large skillet. Add the chickpeas and sauté them for about 6 minutes, until they have taken on a little color.
Stir in the Dijon mustard so it coats the chickpeas evenly.
Season with pepper and salt to taste, then serve while still warm.
