Nni Ede (Nigerian Pounded Cocoyam)
Nni ede is a Nigerian pounded dough made from cocoyam and cassava flour, served alongside a bowl of soup. Pounded cocoyam turns soft and sticky on its own, so cassava flour goes in as a binder, giving a thicker mixture that holds its shape for rolling and scooping. The result is a mild, smooth swallow made for dipping into ẹ̀gusi, ogbonno or okro soup. It needs only three ingredients.
Instructions
Cut the cocoyam into small pieces and rinse them. Boil the pieces for a few minutes, then drain.
Stir water into the cassava flour until it forms a dough, then shape the dough into balls.
Boil the cassava balls for a few minutes, then drain them.
Pound the cassava balls and the cocoyam together until the mixture is smooth and free of lumps.
Serve the pounded dough with the soup of your choice, such as ẹ̀gusi, ogbonno or okro.
