Oatmeal Chocolate Chip Cookies

These oatmeal chocolate chip cookies are built around the oats instead of adapting a plain flour cookie. Rolled oats make up a large share of the dry mix, and a teaspoon of cinnamon backs them up with warmth. Shortening keeps the dough soft and easy to roll into balls. Walnuts and chocolate chips go in last, and you can scale them up or down to taste.
Instructions
Heat the oven to 180°C (350°F). Grease a baking sheet or line it with parchment.
In a large bowl, beat the eggs lightly until the yolks break, then mix in the shortening. The mixture will be loose.
Mix in the brown sugar, milk, vanilla and salt until combined.
In a second bowl, stir together the flour, baking powder, baking soda, cinnamon and rolled oats.
Tip the dry mixture into the wet mixture and mix until you have a soft dough.
Stir in the chocolate chips and walnuts. For better distribution, you can toss them in a little flour first.
Roll the dough into balls and set them on the prepared baking sheet. Bake for 15 to 20 minutes.
