Ofada vegetable rice pairs a Nigerian short-grain rice with a quick sauce of fresh tomatoes, peppers and prawns. Ofada has a firm bite and a earthy, slightly nutty taste, so it holds up well to the sauce. The rice is parboiled with onions first, then finished in the pot so it drinks up the spiced tomato base. Cinnamon, nutmeg, thyme and Nigerian curry powder give it a warm, layered savor.

Instructions

Rinse the rice under running water, stirring it with your hand, until the water runs clear.

Bring a pot of water to a boil, then stir in the rice and a handful of diced onions. Cover and simmer for 15 minutes, then drain the rice in a sieve and set it aside.

Grind the red bell pepper, tomatoes, a little onion and the ginger, if using, together into a coarse sauce base.

Heat a thin layer of groundnut oil in a clean pot and add some diced onions. Stir well, then add the green bell pepper, green beans, sausages if using, carrots, spring onions, prawns, cinnamon and nutmeg. Cook for a few minutes, stirring, until the vegetables begin to soften.

Stir in the ground tomato mixture along with the curry powder, thyme and a little water. Bring to a boil and season with salt.

Add the drained rice to the sauce and stir to coat it. Cover the pot and cook until the liquid has been absorbed and the rice is tender.
