Orange Chocolate Chip Muffins
Orange Chocolate Chip Muffins pair citrus with two kinds of chocolate in a quick, easy batter. Instructions
Heat the oven to 220°C (350°F) and grease a muffin pan.
Sift the flour into a large bowl. Add the butter and rub it into the flour with your fingertips until the mixture looks like coarse crumbs.
Stir in the sugar, both kinds of chocolate chips, the lightly beaten eggs, the milk, the orange juice and the orange rind.
Mix well until everything is evenly combined and no dry flour remains.
Spoon heaped tablespoons of the batter into the greased muffin pan.
Bake for 15 to 20 minutes, until the muffins are cooked through.
