Ozark Pudding
Ozark pudding is a baked apple and nut dessert that apparently comes from the Ozark region of the United States. It uses brown sugar in generous quantity, which gives the cake-like pudding a deep molasses sweetness. Chopped apples keep the inside moist, while the nuts add crunch. The batter is stirred together in one bowl with very little flour, so it takes minutes to prepare. Spoon it out warm with cold cream or ice cream.
Instructions
Heat the oven to 350°F. Grease a casserole dish and set it aside.
Beat the eggs well in a large bowl. Add the flour, brown sugar, baking powder, salt and vanilla, and stir until the batter is evenly mixed.
Fold in the chopped apples and nuts, working them through the batter until every piece is coated.
Pour the mixture into the greased casserole dish and spread it level.
Bake for about 35 minutes, until the pudding is set and the top is browned.
Serve warm, topped with whipped cream or ice cream.
