Passover Apple Cake
This apple cake is made with matzo cake meal instead of flour, so it is kosher for Passover and still eats like a coffee cake. Two layers of sliced apples sit inside a thin egg batter, and a cinnamon and walnut topping covers the top. Granny Smith apples are the contributor's pick, since their tartness balances the sugar. Serve it as a snack or as dessert.
Instructions
Heat the oven to 350°F and lightly grease an 8 to 9 inch square baking pan.
In a medium mixing bowl, beat the eggs with the granulated sugar and oil until the mixture looks light.
Add the matzo cake meal and stir until the batter is well combined.
Pour half of the batter into the greased pan and spread half of the sliced apples over it.
Pour the rest of the batter over the apples, then top with the remaining apples.
In a small bowl, mix the walnuts, the ½ cup sugar and the cinnamon, then sprinkle this topping evenly over the apples.
Bake for about 1 ½ hours, until the cake is done.
