Passover Orange Walnut Cake

This Passover orange walnut cake needs no flour at all, relying on matzah meal and ground walnuts for its structure. Five eggs give it lift, and a cup of oil keeps the crumb moist, which matters because matzah meal can turn dry. The method is a single bowl and a few stirs, so it suits a busy holiday kitchen. Be generous with the orange extract, since it carries the whole flavor.

Instructions

Heat the oven to 350°F so it is fully up to temperature when the batter is ready.

Beat the eggs in a large bowl, then add the sugar and mix until combined.

Stir in the oil, then add the matzah meal and mix until no dry patches remain.

Fold in the ground walnuts and mix until they are spread evenly through the batter.

Add orange extract generously and mix again. Taste a little of the batter if you like, since the extract is the only orange flavor in the cake.

Pour the batter into a 9-inch cake pan.

Bake in the preheated oven for 30 to 40 minutes, until the cake is set in the center.
