This peanut butter fudge is made in one saucepan and finished with an electric mixer, with no candy thermometer needed. The boil lasts just two minutes, so the work is quick. The hot peanut butter and butter base is beaten into powdered sugar, which gives the fudge a smooth, dense texture once it cools. Cut it into small squares and keep a few back for yourself before it goes around.

Instructions

Melt the butter in a medium saucepan over medium heat.

Stir in the brown sugar and the milk. Bring the mixture to a boil and cook for only two minutes, stirring constantly so it does not catch on the bottom.

Take the pan off the heat. Whisk in the peanut butter and the vanilla until the mixture is evenly blended.

Work quickly and pour the hot mixture over the powdered sugar. Beat with an electric mixer until the fudge is smooth.

Pour the fudge into an 8x8-inch pan and let it cool until set. Cut it into whatever shapes you like.
