Peanut Butter Sandwich
This peanut butter sandwich gets its character from a filling that is blended before it ever touches the bread. Peanut butter, honey and butter are mixed into a rich, sweet spread, then set against jam on buttered toast. The warm crunch of the toast and the cold milk on the side make a five minute lunch that feels more considered than the usual spread-and-fold.
Instructions
Toast the two slices of bread, then spread soft butter over them while they are still warm.
In a small bowl, mix together peanut butter, honey and some more butter until you have a smooth, spreadable paste. Spread it over one slice of the toast.
Spread preserves over the second slice. Press the two slices together with the fillings facing in.
Cut the sandwich in half and serve it right away with a glass of very cold milk. If the peanut butter mixture is too runny to handle, skip the extra butter and spread a thin layer of honey on both slices instead.
