Persian Apple Dessert
Persian Apple Dessert is a raw apple dish that takes only a blender and a few minutes. Rose water or orange flower water gives the fruit a floral, perfumed edge, while lemon juice keeps it bright and a dash of salt sharpens the sweetness. Blending the apples in two batches keeps the texture coarse rather than mushy. Look for the flower waters in gourmet and specialty shops.
Instructions
Peel the apples and cut them into pieces small enough for your blender to handle. Divide the pieces into two equal portions.
Put the first half of the apples into the blender along with the sugar, lemon juice, rose or orange flower water and the dash of salt. Start with 2 tablespoons of sugar and use the third only if your apples are tart.
Cover the blender and run it until the apples are coarsely chopped, which takes about 20 to 30 seconds. The mixture should still have texture and not be a smooth purée.
Add the remaining apples and blend again until they are coarsely chopped as well. Serve the dessert right away, while the apples are still fresh and pale.
