Pinakbet

Pinakbet is a Filipino vegetable stew built on bagoong alamang, the salty fermented shrimp paste that seasons the whole pan. Here it is softened with garlic, onion, and tomato, then used to coat bitter melon, sweet potato, string beans, eggplant, and okra. The vegetables go in by cooking time, so the firm ones start first and the delicate ones finish tender. Spoon it over white rice.
Instructions
Set a skillet over medium heat and let it warm up. Pour in the oil, add the garlic, and stir for a short time, just until it smells fragrant.
Add the chopped onion and cook it, stirring now and then, until it turns soft.
Stir in the tomatoes, the bagoong alamang, and the pinch of salt. Let the mixture simmer for 5 minutes so the tomatoes break down into a savory base.
Add the bitter melon and sweet potato, then cover the pan. Cook until both are nearly tender but still hold a little resistance when pierced with a knife.
Add the string beans, eggplant, and okra, and cover the pan again. Cook for a few minutes, until every vegetable is tender.
Spoon the vegetables and their sauce over cooked white rice and serve.
