Pizza Omelet
The pizza omelet turns a quick breakfast into something that tastes like a slice, using just two eggs and a handful of toppings. The sauce is seasoned ahead of time so the herbs have a few minutes to soften into the tomato. Cooking the omelet covered over low heat sets the eggs gently, and a short microwave step means the peppers and mushrooms are already hot when they go on.
Instructions
Stir your seasonings into the tomato sauce and set it aside so the flavors can blend while you prepare everything else. Basil, crushed red pepper and oregano all suit it.
Beat the eggs well in a bowl. Spray a small skillet with cooking spray and set it over low heat.
Pour the beaten eggs into the skillet and cover it. Cook for 3 minutes, until the eggs are almost set.
Carefully flip the omelet and cook for another minute. While it cooks, combine the mushrooms and peppers and microwave them for 30 seconds.
Spread the seasoned tomato sauce over the omelet, then scatter the mozzarella on top. Add the hot mushrooms and peppers over the cheese.
Cover the skillet and cook for 2 more minutes, until the cheese has melted. Slide the omelet onto a plate and serve.
