Orange-Glazed Sweet Potatoes
Thinly sliced sweet potatoes baked in orange juice, brown sugar and warm spices make an easy side dish for four. Slicing the potatoes to one eighth of an inch lets them soften fully and soak up the glaze as they bake. Orange peel gives the sauce a sharp citrus edge against the brown sugar, while cinnamon and fresh nutmeg add warmth. Everything is mixed in one bowl and baked covered in a single dish.
Instructions
Heat the oven to 350°F. Slice the sweet potatoes into rounds about ⅛ inch thick and spread them in an even layer in an 8-inch square baking dish.
In a bowl, mix the orange juice, brown sugar, wheat germ, margarine, orange peel, cinnamon and nutmeg until combined.
Pour the orange mixture over the sliced sweet potatoes so that they are all coated in the liquid.
Cover the dish with foil or a lid and bake for 1 hour. The sweet potatoes are done when a knife slides into them easily.
